Apple Pie Blueberry Oatmeal

A cozy breakfast perfect for fall & winter mornings ❄️

Stewed apples 🍎 are rich in soluble fiber, particularly pectin (a prebiotic) which can help feed the good bacteria in our gut. This recipe is also just absolutely delicious; the stewed apples & blueberries are so tasty and contrast the grainy and nutty flavors and texture of the oatmeal perfectly.

SERVINGS: 1 `. PREP TIME: 5 MIN COOK TIME: 8 min

INGREDIENTS

OATMEAL

  • 1 apple (cut into med sized bites)

  • 1/4 c rolled oats

  • 1 tbsp chia seeds

  • Ceylon cinnamon (as much as you like, I like a lot ~10 shakes)

  • 1 c hot water

TOPPINGS

  • fresh or frozen blueberries

  • almond butter

  • crushed walnuts or pecans

  • ground flax seed

  • hemp seeds

DIRECTIONS

  1. Add apples, oats, chia seeds, cinnamon and hot water to small pot over medium heat.

  2. Stir it around so it’s well incorporated.

  3. Once it starts bubbling, put it on low heat and cover.

  4. Let simmer for another 5 mins, stirring every couple of minutes to check it’s not burning.

  5. Serve with toppings and enjoy!
