Salted Caramel Protein Balls

These scrumptious no-bake protein balls (but really dessert ๐Ÿ˜‰) are adapted from the lovely Sarah's Day. Made with only 6 ingredients, these raw vegan protein balls are such a treat. I swear they taste like CAKE! ๐ŸŽ‚ SOOO GOOD!! The best part: no turning on your oven! A yummy, easy & nutrient-dense treat to prep and have on hand during a busy week!

SERVINGS: 12 ` PREP TIME: 20 MIN COOK TIME:

INGREDIENTS

  • 1 cup medjool dates, pitted + soaked (about 9 dates)

  • 1/4 cup soaked buckwheat groats (soaking optional*)

  • 1/2 cup Vivo Life Perform Salted Maca Caramel protein powder

  • 1/2 cup macadamias

  • A few dashes of cinnamon

  • Just under 1/4 cup shredded coconut for garnish

DIRECTIONS

  1. Soak pitted dates and buckwheat groats (in separate bowls) in warm water for 5 mins then drain

  2. Add dates, protein powder, macadamias, cinnamon and buckwheat groats last (to maintain some crunch) to your food processor.**

  3. Pulse. If itโ€™s having a hard time processing, add the tiniest splash of warm water. (you can always add more but you can't subtract!)

  4. Once mixed well and you can form them into balls, remove blade.

  5. Sprinkle shredded coconut onto a sheet of parchment paper or a plate.

  6. Grab a piece of the mix and roll into a ball. Then roll the ball over the shredded coconut until completely coated. Repeat until all are coated.

  7. Enjoy!

  8. Store remaining protein balls in fridge. (These taste 100x more amazing after theyโ€™ve chilled in the fridge!!! ๐Ÿ™Šโ„๏ธ)

NOTES

  • *If you donโ€™t have a problem digesting them, you can coat unsoaked groats to your protein ball mix last (without processing them) for a crunchier protein ball.

  • **If using a mini food processor (holds 2.5 c) like me, donโ€™t overflow it like I did ๐Ÿ˜ฌ put half of the ingredients in at a time and complete in 2 batches.
