Apple Pie Blueberry Oatmeal

A cozy breakfast perfect for fall & winter mornings โ„๏ธ

Stewed apples ๐ŸŽ are rich in soluble fiber, particularly pectin (a prebiotic) which can help feed the good bacteria in our gut. This recipe is also just absolutely delicious; the stewed apples & blueberries are so tasty and contrast the grainy and nutty flavors and texture of the oatmeal perfectly.

INGREDIENTS

OATMEAL

  • 1 apple (cut into med sized bites)

  • 1/4 c rolled oats

  • 1 tbsp chia seeds

  • Ceylon cinnamon (as much as you like, I like a lot ~10 shakes)

  • 1 c hot water

TOPPINGS

  • fresh or frozen blueberries

  • almond butter

  • crushed walnuts or pecans

  • ground flax seed

  • hemp seeds

DIRECTIONS

  1. Add apples, oats, chia seeds, cinnamon and hot water to small pot over medium heat.

  2. Stir it around so itโ€™s well incorporated.

  3. Once it starts bubbling, put it on low heat and cover.

  4. Let simmer for another 5 mins, stirring every couple of minutes to check itโ€™s not burning.

  5. Serve with toppings and enjoy!
