Caramel Sauce

I have the perfect holiday treat to share…vegan caramel sauce! 🤩 When I figured out I could make vegan caramel so easily in 2020, I almost lost my mind LOL. Sounds dramatic but caramel has always been like the *ultimate* treat for me! It's my absolute favorite flavor ever!

My favorite ice cream is salted caramel 🍦 my favorite Starbucks drink growing up was a caramel frappe, my favorite childhood cake 🎂 was a snickers cake (you know the one from Lucky's with snickers candy 🍫 and that delicious caramel drizzled all over 🤤) you get it, I LOVE CARAMEL!!⁠ If you also love caramel, you’ve gotta give this recipe a try!

caramel sauce

SERVINGS: 1/4 cup PREP TIME: 3 min COOK TIME: 3 min

INGREDIENTS

  • 1 tbsp water

  • 1/4 c coconut sugar

  • 1 tbsp maple syrup

  • 1 tbsp full fat coconut milk*

  • 1/2 tbsp unsalted vegan butter

  • pinch of salt

DIRECTIONS

  1. In a small, heavy-bottomed sauce pan, combine water and sugar.

  2. **Gently swirl saucepan just a couple times to incorporate some of the sugar into water.

  3. Add maple syrup.

  4. Turn to medium-low heat. About a 3 on my stove. Do not stir or swirl at all once heat is on - caramel will get messed up.

  5. Without stirring, allow it to dissolve until it bubbles, thickens and turns a dark amber color.

  6. Remove from heat.

  7. Quickly add in milk and butter and whisk together, then mix in salt.

  8. Set aside to cool before enjoying.

  9. Store remainder in fridge in an airtight jar.

NOTES

  • *Any plant based milk works fine but the more fat, the better.

  • **Sugar doesn’t need to be 100% covered in liquid. Don’t swirl or stir too much. The less you mess with it, the better. Alternatively, you can splash the tiniest (and I mean tiniest) bit of water over the area where coconut sugar was sitting (and not dissolved).

  • Avoid high heat, you don’t want it to burn.

    • Big Tree Farms organic brown coconut sugar

    • Whole Foods 365 organic dark maple syrup

    • Native Forest simple organic coconut milk (I dilute it with some spring water in a mason jar + shake)

    • Miyoko's organic unsalted cultured vegan butter
