Iced Mint Matcha

This vegan mint matcha drink was inspired by a YouTube video I watched of someone ordering their matcha with mint (plus a bunch of other stuff) and it sounded so good! Spoiler alert: it's the best!! You NEED to try! It's refreshing, invigorating and perfect for a hot summer day. Plain iced matcha just doesn’t hit the same anymore!

INGREDIENTS

  • 1 thick sprig of spearmint

  • 1 tsp maple syrup

  • ice cubes, handful

  • 5 oz of strong matcha, chilled

  • ~1 cup coconut milk

  • muddler

DIRECTIONS

  1. To a 16 oz cup, add mint and maple syrup. Muddle 5-6 times to release the mint's essential oils and aroma.

  2. Add ice cubes and coconut milk.

  3. Pour over chilled matcha.

  4. Stir and enjoy!
